The perfect Valentine’s Day dinner

There’s no better way to show your significant other you care on Valentine’s Day than a home-cooked meal. This year, skip the expensive and indulgent prix fixe restaurant menus and spoil your loved one by preparing a healthy three-course meal at home. Start with a spinach salad with beets, walnuts and goat cheese, followed by salmon scampi (recipe below), and finish with avocado mousse (substitute dark chocolate for added antioxidants). You can prep the vegetables and make the mousse the day before, so you’ll have more time to spend with your date, or you can cook together. This meal is full of cancer-fighting foods your valentine is sure to appreciate!

Salmon scampi with spinach and tomatoes

6 oz whole wheat linguine

1 tbsp butter

1 tbsp olive oil

3 cloves garlic, minced

1 lb salmon, skinned, cut into 1-inch pieces

½ tsp ground black pepper

¼ tsp sea salt

4 cups baby spinach

1 cup halved cherry tomatoes

⅓ cup dry white wine

¼ cup low-sodium vegetable broth

1½ tsp flour, dissolved in 1½ tsp water

2 tbsp parsley, chopped (plus more for garnish)

¼ tsp crushed red pepper flakes

½ lemon, juiced


1. Cook noodles according to package directions.

2. Meanwhile, in a large skillet on medium-high heat, melt butter and oil. Stir in minced garlic. Add salmon, salt and pepper. Cook, stirring occasionally, for about 2 minutes.

3. Add spinach and tomatoes and cook, stirring a few times, until salmon is cooked and spinach begins to wilt, about 2 minutes. Stir in wine, broth and flour-water mixture and whisk liquid until it comes to a boil and thickens. Add parsley, red pepper flakes and lemon juice. Toss with cooked pasta and serve.
